Choc Chip & Macadamia Nut Biscuits

What can I say these were sweet & delicious, perfect with a cup of Billy tea. I always thought biscuits would be difficult in the camp oven, but turns out they are really quite easy. Yummy. These were cooked in our 14 quart Furphy Camp Oven. 





Choc Chip & Macadamia Nut Biscuits

Ingredients
- 150g of softened butter
- 2 cups of brown sugar
- 1 egg
- 1 tablespoon of golden syrup
- 3 cups of plain flour
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 packet of chocolate chips
- 100g of macadamia nuts chopped



Directions
- preheat your camp oven, with a trivet in the bottom over the fire

- dig a hole in the ground for your camp oven to go in during cooking, you can light a small fire in the hole to get it hot. 

- cream the soft butter & sugar in a bowl
- add in the egg & golden syrup & mix until combined 
- add the dry ingredients & stir through till you get a soft dough 
- add the choc chips & nuts


- shape into balls & press flat onto an oven tray (we used a pizza tray) lined with baking paper, leaving room for the biscuits to spread during cooking


- place in the preheated camp oven
- place the camp oven on top of a shovel of coals in the hole you dug, with 1/2 a shovel on top
- check after 10 minutes, ours took between 15-20 minutes depending on the coals & if you like soft or crunchy biscuits. 
- remove from the oven when cooked & allow to cool (if you can wait that long)


- this made 16 biscuits & took 3 batches in the camp oven to cook them all
- if it is a really hot day, keep your biscuit dough in the fridge between batches

These were so so good, we got about 3 days out of them surprisingly, I didn't think they would last that long before getting eaten!!
